Mini Pancake Batter

  • 1 cup all-purpose flour sifted for a fluffier texture
  • 2 tsp baking powder for a light and airy texture

  • 3/4 cup milk use whole milk for richness
  • 1 large egg room temperature
  • 2 tbsp melted butter slightly cooled
  • 1 tsp vanilla extract optional, for extra flavor
  • 1 pinch salt balances sweetness

Instructions
 

  • In a large mixing bowl, sift together the flour, baking powder, sugar, and salt.
  • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring gently until combined. Do not overmix.
  • Preheat a non-stick pan or griddle over medium heat and lightly grease with butter or cooking spray.
  • Using a squeeze bottle or small ladle, pour small rounds of batter onto the pan, about 2-3 inches in diameter.
  • Cook for 1-2 minutes until bubbles form on the surface, then flip with a spatula.
  • Cook the other side for another 1-2 minutes until golden brown. Transfer to a plate and repeat with remaining batter.

Notes

For extra fluffy pancakes, avoid overmixing the batter. Serve with maple syrup, berries, or a dusting of powdered sugar for a delicious treat.
